Serves 4 – 6


Mixed mushrooms (portobello, button, chestnut)

180ml vegetable oil

60ml white vinegar

30ml maple syrup

1/2 tsp smoked Paprika

4 tsp onion granules

2 large garlic gloves, crushed

2 tsp chilli flakes

1 tsp dried sage

1 tsp smoked sea salt

1 tsp black pepper, ground


Thread the mushrooms whole onto the skewers, or cut some in half to create a mixture.

In a bowl mix together the remaining ingredients to create a marinade and then place the mushrooms in to marinate.

Put the marinated mushrooms on skewers, ready for the BBQ.

Finally, BBQ the skewers or cook on a griddle pan until cooked through. Baste with additional marinade occasionally while cooking, any leftover marinade can be used as a salad dressing or will keep in the fridge for a few days.
